pistachio - raspberry
Our pistachio-raspberry Esmé macaron is our evergreen favorite, now we've reimagined it in a raspberry-pistachio bisou.
The basis of our bisou is a soft, slightly citrusy raspberry sponge cake topped with crunchy pistachio pieces, on top of which we piled our raspberry jam and a slightly salty pistachio praline, surrounded by light pistachio foam, and finally dipped in crunchy chocolate, in which we also hid freeze-dried raspberry pieces.
