blond chocolate - raspberry
Petit choux is among my favourite French pastries. The airy, puffy and crisp pastry's history dates back to the 16th century and had never gone out of fashion since. This time I filled it with a creamy and rich blond chocolate ganache, made of Valrhona's Dulcey chocolate, an amazing flavour somewhere between white and milk chocolate with irresistible caramel and butter biscuit aromas. The pastry is also filled with a creamy yet fragrant raspberry cream, made of Valrhona's amazing Inspiration Raspberry chocolate. The best bite will always be the middle of the Petit Choux as a whole juice raspberry is well-hidden in the centre of the dessert.
