Petit choux is an airy, puffy and crisp pastry. This time I filled it with a rich and creamy almond ganache, a fragrant raspberry namelka, a whole raspberry all covered with a creamy and rich blond chocolate ganache, made of Valrhona's Dulcey chocolate. As an additional surprise, super crunchy Dulcey chocolate crisps are well hidden in the middle.
