forest berries - vanilla
We ADORE canelé, this traditional French dessert from Bordeaux, which is crispy on the outside and fluffy on the inside, and which we have been making with never stopping passion at Chez Dodo for 10 years. This time, we filled the center of the canelé with a fresh forest fruit compote and topped it with a fluffy vanilla chantilly, colored with butterfly pea flower, and dipped in crispy Valrhona white chocolate. We sprinkled the top of our little blue "hat" with freeze-dried forest fruits.
