Mignon - much like a macaron - is a few bites of happiness. At Chez Dodo, we tried to restore its original quality and aesthetics and imagine what this popular cake could be like if it was made with the finest ingredients and with the greatest care.
What makes our Esmé mignon really special is that we pile a fantastically soft yet incredibly pistachio cream on each layer of its refreshingly raspberry sponge, and finally we dip this perfect little dessert cube in Valrhona chocolate.
