Mignon - much like a macaron - is a few bites of happiness. At Chez Dodo, we tried to restore its original quality and aesthetics and imagine what this popular cake could be like if it was made with the finest ingredients and with the greatest care.
This time, between the fluffy almond sponge layers, we layered a rum, golden raisin, slightly citrusy ganache and a dark chocolate, coffee, apricot, brown rum miracle layer, which is the soul of our mignon. Dipped in pastel pink Valrhona chcolate, each bite is a small time travel.
