A red, heart-shaped almond cookie hides all the love we could possibly slip into a January day. The red velvet base is made with browned butter, toasted almonds, and a touch of white chocolate, allowing the caramelled, biscuit-like flavors to melt gently on the palate while remaining soft and slightly sticky inside. At the center lies our homemade raspberry jam, made from juicy, ripe raspberries, wrapped in a silky vanilla cream so that each bite is simultaneously sweet and perfectly balanced with fruitiness. The whole creation is crowned with a delicate, spiced raspberry heart cookie. A gentle tap and the heart breaks effortlessly.
