Autumn apple season always sparks our imagination. For us, the most beloved apple is the one from Grandma’s garden — crisp and tart, with a delicate skin, perfect both on its own and baked into something comforting. This mignon was inspired by that very apple.
We crafted a warmly spiced honey sponge, layering it with a heartwarming ginger apple compote and a luscious caramel crème brûlée cream. Each little autumn square is topped with crunchy caramel cubes — a final nod to the golden season.
