Mignon - much like a macaron - is a few bites of happiness. At Chez Dodo, we tried to restore its original quality and aesthetics and imagine what this popular cake could be like if it was made with the finest ingredients and with the greatest care.
This time, between the fluffy almond sponge layers, we layered a divinely refreshing lemon cream, made from Valrhona's less sweet Opalys white chocolate and plenty of fresh lemon peel and fruit. We layered this with an intensely flavored homemade lemon curd, so that every bite of our Sophie mignon became bursting with freshness.
