pistachio - red currant
Our little Alice has been reinvented as a pretty springtime petit chou, one of our favorite French pastries that is crunchy on the outside and fluffy on the inside, lightly flavored with red currants and pistachios. Inside the little doughnut, we placed homemade pistachio praline, a super light pistachio cream, and an explosively fruity red currant compote. Alice's little hat is a red mini chou, and we decorated its collar with vanilla chantilly and freeze-dried red currants and pistachios.
